One of the best preservation methods is to turn the fruit into jams and jellies, which will last you through the winter and well into the following spring. Here you will learn the secrets of making perfect jams and jellies with blackberry jam (one of the first you can make in the season) being used as an example.In the UK, at least, there is a considerable difference between jams and jellies. Where a jam is made with whole fruit (including skins and seeds) and a jelly is made solely from the juice strained from the fruit. Both are cooked with sugar and use natural (or added) pectin as the gelling agent. They are boiled until they reached the ‘setting point’ (when a spoonful of the jam or jelly, when placed on a cold plate forms a skin when pushed with a fingernail).For a jam or a jelly to set you typically need 60% sugar and about 0.2 to 0.5% pectin (which is the setting agent). It’s the boiling process that concentrates the sugars added to the jam and the natural sugars in the fruit down to this level. Of these components, pectin is probably the most important.Pectin itself is a complex sugar found in plants (technically called a heteropolysaccharide) and is the main gelling agent in jams and jellies. In the plant itself, pectin helps to bind the plant cells together and also regulates the water in the plant.Indeed, it’s pectin that leads to the noticeable changes on ripening of many fruit. Initially, many fruit are packed with pectin and this keeps the fruit firm and hard. On ripening, pectin is broken down into other sugars by the action of the enzymes pectinase and pectinesterase this makes the fruit noticeably softer and makes then taste sweeter.Pectin is a critical component for the setting of jams and jellies, in that it’s the pectin from the fruit that allows the preserve to set hard. When fruit is cooked the pectin from them is released into the liquid. When the solution cools the pectin molecules join together forming a mesh and it’s this pectin mesh that allows the jam to set. This is why sugars specifically designed for jam making, the so-called ‘jelling sugars’ or ‘sugar with pectin’ contain pectin as an additive (but you typically need a mixture of about 60% sugar to 40% fruit for this to work).However, many fruit contain natural pectin, with apples, quinces, plums, gooseberries and oranges (or other citrus fruit) containing the most. Apples and apricots typically contain 1% pectin, with crab apples containing up to 3% pectin. Oranges vary between 0.5% and 3.5%, with the zest containing most pectin. Soft fruit like cherries, grapes, strawberries and blackberries contain little pectin and either have to be concentrated down or need to be mixed with apples and other fruit to achieve the setting or gelling point. It should be noted, however that seeds often contain lots of pectin which is why grape jellies are always made with grape seeds and why plum seeds are often added in a muslin bag to plum jams. You can also add citrus peel to other jams to add more pectin to them.One interesting thing is that carrots can contain up to 1.5% pectin so you can add a muslin bag of grated carrot to a fruit jam or jelly to help them set. The same is true of rhubarb which also contains about 1.2% pectin (which is why blackberry and apple or strawberry and rhubarb mixes are common).To show you how this process work, below is a recipe for jam made with blackberries.Blackberry JamBlackberries contain very little pectin and the majority of what little pectin is present can be fund in the seeds. As this is a jam, made with whole fruit (and not a strained jelly) additional pectin has to be added. You can substitute jelling sugar for the sugar in the recipe below or you can add about 45g powdered pectin, but I prefer the natural methods so I add 2 chopped crab apples to the jam base for their pectin.Ingredients:1.6kg ripe blackberries250ml water1.35kg sugar2 crab apples (or 1 cooking apple), choppedMethod:Add the blackberries to a large pot then pour in the water and bring the mixture to a boil. Reduce to a simmer and cook, covered, for 5 minutes. Transfer the mixture to a fine-meshed sieve and press through the sieve into a bowl with the back of a spoon (this removes the seeds).Combine the strained seeds and the apple in a muslin or cheesecloth bag and tie tightly. Add this bag of seeds and apple to your pan along with the blackberry pulp and bring slowly to a rolling boil. Add the sugar, return to a boil and boil hard for about 10 minutes. Test for setting by placing a plate in the fridge. Spoon a little of the jelly onto the plate, allow to cook then move it with your fingernail. If a crinkly skin forms then the jelly is ready. If not continue boiling for 5 minutes more and test again.Skim the surface then ladle into sterilized jars that have been warmed in an oven set to 110°C for 15 minutes. Allow 1cm of head space then secure the lid, allow to cool and store.For a Blackberry JellyIf you want to make a jelly jelly from the mixture then add the whole fruit and water to a saucepan, bring to a boil, reduce to a simmer then cover and cook for about 10 minutes, or until the fruit is soft. Place in a jelly bag or a fine-meshed sieve covered with a double layer of cheesecloth or muslin and allow to drain naturally in to a large bowl over night (do not be tempted to press down on the pulp with a spoon, as this will make your jelly cloudy).The following day, measure the volume of liquid you have and add 75g of sugar per 100ml of liquid. Add the juice and sugar to a saucepan then follow the instructions given above for boiling and testing for setting.These jam and jelly instructions work for just about any fruit. The only consideration is how much pectin lies in the fruit and how likely they are to set on their own.

When agricultural crops are reproduced by division after several generations, often a decline occurs in qualities such as vigor, yield, disease resistance, plant and fruit appearance and uniformity of size or shape. This condition of decline is commonly called, “run out.”Strawberry plants have demonstrated this clonal decline (running out) for many years. After growing strawberry plants for five or more years, gardeners became accustomed to dividing a clump of plants that contained the mother plant (oldest plant) in the center and replanting the smaller daughter plants to be used as seed plants the following season. Certain genetic, undesirable changes (mutations) were brought to the surface, as seen in daughter plants; as more and more plants were continuously grown, generation after generation. Some of these corrupting mutations may be visually observed as the plant vigor decelerates (declines); the yield of strawberries is less, and sometimes the berries are misshapen; and finally, the plants become extremely susceptible to diseases caused by virus, bacteria, fungi, insect susceptibility, and nematode victimization. Agricultural researchers advised strawberry growers to discontinue old variety lines and clones and were told to buy new, certified plants that restore the vigor needed to increase yields of future strawberry gardens.This phenomenon of strawberry decline has been experienced with other agricultural crops such as sweet potato vines, raspberry bushes, blackberry bushes or vines, and banana trees. The problem with banana trees has emerged as the greatest possible catastrophe facing modern agriculture today, since bananas, produced only by plant division and not seed, are the most popular fruit in the world and may face extremely serious setbacks, unless the efforts of scientists from Israel to “clean up” the evolved, accumulated defects by using tissue culture that could cause the commercial banana production to rebound.Old “run out” clones of agricultural crops have in the last decade been rejuvenated to produce unprecedented yields and to restore confidence in a high quality product. Growers of agricultural, commercial, crop plants can avoid clone decline, “run out,” by buying certified plants that have been grown under strict governmental watchdog supervision, under a technique called, “tissue culture.” To “clean up” problems in weakened, flawed clones of raspberry plants, a clump of cells is taken from the growing tip of the plant called the apical meristem. These cells grow rapidly and rarely contain virus or other harmful defects and are placed within a sterile growing medium, where they grow into a clump that develops roots and a growing shoot. This micro-plant is grown into many other mother plants called “nuclear stock mother plants.” These mother plants are sent out to be multiplied over and over into certified plants by nursery propagators with a regained vigor, disease-free status and desirable qualities that were once present in the original profitable varieties.One eclectic segment of agriculture that has been negatively impacted by clonal decline, “run out,” is the pick-your-own operation, where berry plants are not replaced often by operators with certified plants. Diseases and pests appear as a greater threat every year. This same phenomenon of disease and pest buildup is well known in home gardens where tomatoes, pepper plants, and many other vegetable plants are abandoned after a few years in favor of new soil locations. The decline of strawberry plants, raspberry plants, and blackberry plants in pick-your-own operations can not always be reversed by simply replanting the site with certified plants, unless the soil is first fumigated and sterilized. Very little attention has been paid to certify muscadine and scuppernong grape vines to be free of virus, bacteria and fungal infestations in pick-your-own operations. Those grapevines are normally multiplied by various methods other than seed planting.Recent improvements in offering agricultural plants for certification will ultimately insure the survival of valuable berry crops like blackberry plants, raspberry plants, and strawberry plants. Crops such as banana trees that are grown in tissue culture in Israel for planting in Central America can offer hope that commercial interruption of banana fruit will be avoided. Recent tissue culture advancements have given commercial growers the security of continued profits and quality, sweet potato products to enjoy by growers and consumers.The application of tissue culture propagation to the future of canna bulb, (rhizome), and commercial production could save growers who are floundering in complaints and indecision to restore a once important agricultural crop with a promise of future profits and a satisfied wholesale and retail customer. This application of tissue culture to future crops of every type that are grown by plant division will determine whether or not those crops will survive and not “run out.”

Blackberries were perceived by the ancient cultures as being a wild plant, and historical accounts for a backyard culture of blackberry bushes are few. The Greeks used the blackberry as a remedy for Gout, and the Romans made a tea from the leaves of the blackberry plant to treat various illnesses.John Bartram, the early American explorer, botanist, and writer founded the first United States Botanical Garden, in 1728. In the early American colonies, William Bartram in his book, Travels, noted that General Oglethorpe was sent to the colony of Georgia in 1733 to investigate the possibility of establishing various temperate and subtropical plants which might “prove valuable for Georgia farms and orchards.” William Bartram noted further in his book, Travels, that he his father, John Bartram, were sent to explore the Southern colonies that included East Florida, Georgia, the Carolinas, and Alabama to take an inventory of plants growing there after the Spanish were expelled by the English. Bartram reported that just outside of Mobile, Alabama, it “grows here five or six feet high, rambling like Brier vines over the fences and shrubs.”Much of the first modern blackberry variety development was done in America, beginning with Judge Logan of California in 1880, and the release and introduction of the Loganberry.The Boysenberry was developed from a natural selection saved from the abandoned farm of Mr. Rudolf Boysen by USDA member George Darrow, along with Walter Knott, a California fruit and berry enthusiast, whose wife began making berry preserves, and that farm later became the famous Knotts Berry Farm, located near the Walt Disney amusement park in California.The Youngberry was developed in 1905 in Morgan City, Louisiana; it is a cross between Luther Burbank’s, Phenomenal Berry, and the Austin-Mayes Dewberry, a trailing blackberry. This berry had excellent qualities, such as taste and high yields, and it soon replaced the Loganberry of California after its release.Blackberry plants, Rubus spp., can not be truthfully separated accurately by taxonomists into species, because the original species that existed centuries ago have intercrossed themselves in the natural state so completely, and the natural selections have reached a critical composition and complexity, that cannot be adequately recreated through backcrosses. Blackberry vines and bushes grow in the native state on every continent except Australia and Antarctica. The adaptatation factor to growing blackberries is broad and the cold hardiness of the blackberry bushes and vines extends into extremely cold territories. The bush form blackberry is more cold hardy than the trailing blackberry vines, and the range of growth extends into the northwestern portions of the United States. The trailing blackberry vines are considered by most taxonomists to be: Rubus macropetalus, Rubus loganobaccus, and Rubus ursinus. Erect blackberry bushes that are recognized as native genera are: Rubus frondosus, Rubus argutus, and Rubus allegheniensis.Thorns are present in native blackberry plants and the thorns prevent grazing wildlife, animals and birds from eating the vines before the berry bushes flower and later when blackberries are produced. When the blackberries grow and ripen, they are not only consumed by wildlife animals and birds, but they have been enjoyed by humans for centuries. Luther Burbank wrote in his book, Fruit Improvement, in 1921 that many hybrids had been developed by his efforts and others to grow thornless blackberry bushes and vines. These thornless creations were at first inferior in taste and quality to the thorny species; however, modern hybridizers of thornless blackberry plants have created the cultivars:The most important new hybrid, the Triple Crown, was released by the USDA. These new thornless blackberry bushes are released for growing in the Middle Atlantic and Pacific Northwest. The Triple Crown is thornless and ripens early to midseason. The fruit is firm and black with a balanced sub-acid sweet taste and is aromatically pleasing. This berry release is expected to be the sensational highlight for gardeners everywhere expecting high quality and growing adaptation. Other, older thornless blackberry releases are: Apache, Hull, Thornfree, Black Satin, Arapaho, Navaho, Chester, and Boysenberry. All these blackberries have overcome the sticky problems of the original thornless blackberry hybrids. Commercial thorny blackberry production has been stimulated by an introduction of these blackberry released cultivars: Austin-Mayes dewberry, Chicasaw blackberry, Shawnee blackberry, Kiowa blackberry, Choctaw blackberry, Cherokee blackberry, Cheyenne blackberry, Lawton blackberry, and the Ouchita blackberry that makes you say ‘ouch’ when you pick them. Most of the above released blackberry cultivars are hybrids of a Brazos blackberry and Darrow cross.Blackberries please the taste of humans as well as that of animals and are believed by many wildlife conservationists to be the most important naturalized growing plant that provides food for wildlife.Wildlife animals and birds eat blackberries as food or receive a thorny protective cover from blackberry bushes or vines that wind along fences, animals such as quail, doves, turkey, raccoons, opossums, and believe it or not, bears.
